I came across this recipe while browsing the internet in my quest to make something exciting yet easy for my children this Republic day. It came out really nice , hence sharing it on R-day eve. So get cooking friends...
Ingredients
Spinach filling

Spinach washed-cleaned
·
Onion fine Chopped
·
Garlic fine Chopped
·
Salt & Pepper to taste
Potato filling
·
Potatoes cooked and cut in
medium size Cubes
·
Cremica Cheese Mayonnaise
·
Salt & Pepper to taste
Carrot Filling
·
Carrots peeled and sliced
·
Cremica Mexican Salsa
·
Salt & Pepper to taste
Lasagne Sheets
·
Oven Proof Glass bowl 3 inch
width-5 inch height
Recipe
Soak the Lasagne sheet in Water till soft. And
drain well.
Cook the Spinach for a few Min in Hot Water and cool down in Ice Water . Dain well and chop a bit .In a Pan sauté the Onion and garlic till start to get a little Brown and add the Spinach and cook of 1 Min. Season with Slat and pepper to taste. Set aside.
Mix the Potatoes and the Cheese Mayonnaise.Seaason with Salt and Pepper to taste. Set aside.
Cook the Carrot for a few Minute in water till soft, drain well and mix with the Mexican Salsa.
In a Oven Proof Glass Bowl spread the Spinach on the Bottom, cover with Lasagne Sheet. Spread the Potato Filling on Top , be careful not to damage the Lasagne below.
Place another Lasagne sheet.
Mix the Carrots and Mexican Salsa and spread on top as last layer. Sprinkle a bit of grated Parmesan or Mozzarella cheese on top, just a sprinkle for not to cove the Carrot to much.
Bake at 200 Celsius in a preheated Oven till the Cheese has a nice Colour.
If you like spicy replace the Mexican Salsa with Chilly Garlic Sauce
