Hyatt Regency, Delhi has come up with this gastronomic bonanza of a festival
to announce the appointment of its new Executive Sous Chef Alessandro Sandrolini -the Cantina E Cucina. Translated into
English it means wine and dine and showcases an exclusive 5 course meal curated
by Chef Alessandro paired with wine chosen by sommelier Viraj Sawant. Moi got a chance to savour this gorgeous fare and
here’s my experience.
Kicking off the fantastic
evening was Parmesan crème brulee
with white truffle oil. This savoury brulee was creamy, cheesy and went well with
a rich Luna Argenta brut, an Italian
wine whose fruity flavours balanced the saltiness of parmesan. This was
followed by Warm asparagus veloute which
was a little too strong for my liking but the caramelized onions sweetened the
deal to a certain extent. It matched the racy ,ripe wine from Tuscany, Vila
Antinori Bianco .Time for some more
cheese on my plate and now in the form Warm
ricotta topped with a semi dried tomato. The fresh mild flavour of ricotta
went well with Blackstone chardonnay
from California that felt equally rich and creamy on the palate.A hefty tortellini stuffed with mushroom arrived
next doused in rich nutty brown butter sauce.The earthy, smoky flavours of the
tortellini were balanced by the Bertani Valpolicella,
a fruity wine with a slightly higher level of acidity. The final course in
mains was some Braised baby fennel served
alongside mash potatoes and some sautéed mushroom that perked up the flavours
of this subtle combination. This was paired served with the dry and light La Braccesca.
The meal ended with a
White chocolate mousse with
marinated strawberry. The tartness of
strawberry , bitterness of rum sauce and the sweet airy mousse together created
a winning combination .It was light, flavoursome and melt on my tongue smooth!
The festival is on till
the 15th of this month every day from 7:00 pm to 11:30 pm. So go
